Blueberry Overnight Oats
I thought I’d share an easy snack I make for my daughter several times a week… Blueberry Overnight Oats.
Some like to eat oats for breakfast, but my daughter prefers them in the afternoon. It’s that perfect sweet, nourishing snack that keeps her satisfied until dinner.
If you want it to be rich and thick and fully hydrated, it’ll reach its peak in about four hours. But if you eat it sooner like my daughter does, no problem. You can actually eat oats raw… think muesli. But if you typically have digestive issues after eating oatmeal, I highly recommend soaking them overnight. It makes them much easier to digest.
There are a bazillion fancy recipes online, but many have added sugar and are more like a dessert. This yummy, satisfying recipe taste plenty sweet, but won’t spike your blood sugar thanks to all the protein and good healthy fats.
You can change up this basic recipe by topping it with different fruits, nuts and seeds. The variations are endless! Give it a try and let me know what you think!
Blueberry Overnight Oats
Serves 2
Ingredients
1 ripe banana
1 cup rolled oats (or steel-cut oats)
1 cup unsweetened almond milk (or any non-dairy milk)
1/4 tsp organic vanilla extract
1/4 tsp cinnamon
2-3 TBSP of raw almond butter
1-2 TBSP chia seeds
Pinch of sea salt (I like the brand Real Salt)
Few drops of liquid stevia to taste (no stevia needed if using sweetened non-dairy milk)
Fresh blueberries for topping
One 16 oz. wide mouth pint glass jar OR two 8 oz. wide mouth half-pint glass jars
Directions
•Mash one banana until it’s a pureed consistency in the bottom of your jar (split the banana if using two jars)
•Add one cup oatmeal and stir well
•Fill the jar with almond milk
•Add vanilla, cinnamon, raw almond butter, chia seeds and sea salt and stir well.
•Taste, then add a few drops of stevia to your desired level of sweetness.
•Top with fresh blueberries.
•Store for a few hours or overnight.*
*You can eat rolled oats right away, but steel-cut oats need to soak overnight. Enjoy!
