Heart-Healthy Lentil Soup
This blog comes with a bit of a WARNING… beans may be good for your heart, but they can be really tough on the gut, right?!
Personally, I can eat some types of beans in moderation, but I have to be careful… very careful. If I overdo it, my body lets me know. So my best advice is to listen to your body and eat accordingly!
If you enjoy lentils and tolerate them well, then you’ll love this heart-healthy soup!

Heart-Healthy Lentil Soup: 💞
Ingredients
1/4 cup ghee
1 onion, chopped
1-1/2 cups carrots, chopped
2 stalks celery, chopped
3-4 cloves garlic, minced
1 bay leaf
2 tsp. Italian seasoning
1 (14.5 oz.) can crushed tomatoes
2 cups dry lentils*, picked through and rinsed (see note below)
8 cups chicken, vegetable or bone broth
1 cup spinach, thinly sliced
1-2 TBSP apple cider vinegar
Sea salt, to taste
Freshly ground black pepper, to taste
Directions
-Heat ghee over medium heat in a large stock pot.
-Add onions, carrots and celery and sauté until onion is tender (about 3-4 minutes). Season a bit with salt and pepper.
-Stir in garlic, bay leaf, Italian seasonings and cook for 1 more minute.
-Add rinsed lentils, broth and tomatoes and bring to a boil.
-Reduce heat and simmer covered for 1 hour.
-When ready to serve, stir in spinach and vinegar and season with salt and pepper to taste. You can also add some greens and maybe a side of brown rice. Enjoy! 💞
*Before you cook your lentils, pour them onto a kitchen towel and check them closely to make sure there are no tiny pebbles or debris. Then rinse them in a colander before cooking.
