Nutrient-Dense Salad
The two star ingredients: MICROGREENS and KALE.
Microgreens are young mini greens packed with even more vitamins, minerals and antioxidants than the full-grown greens. Their mild flavor makes it easy to add to all kinds of foods like salads, smoothies, lettuce wraps, egg dishes and dips.
Still not a kale fan? I get it! It’s definitely an acquired taste. But with all the vitamin A and C, fiber, antioxidants and omega 3s, it’s definitely worth giving another try.
Here are some ways to do it:
1. Remove the fibrous spine and cut leaf into thin strips
2. Add small amounts to foods you already make like soups, stews, chili, stir-fry and one-pot meals
3. Before adding kale to a salad, massage it well with lemon juice and extra virgin olive oil to break down the fibers and make it less bitter
4. Add avocado to balance the flavor
5. Mix it in with milder salads greens you like
