Poached Cod with Tomato Basil Sauce

Last night I made this super easy poached cod dish and my two picky eaters really liked it! I loved that I can just throw the fish in frozen. Dinner was on the table in under 30 minutes. Seriously, the most time-consuming part is cutting the tomatoes!!

Poached Cod in Tomato Basil Sauce 💕
 
Ingredients
 
1 TBSP organic ghee or avocado oil
2 cups cherry tomatoes, cut in half
2 cloves garlic, finely sliced
1/2 tsp sea salt (I use Real Salt)
1/2 tsp ground black pepper
1/2 cup chicken stock
1/4 cup dry white wine (or more chicken stock)
4 / 6 oz. frozen cod (or halibut)
1/4 cup fresh basil leaves, finely chopped
More chopped basil for garnish
 
Directions
1. Sauté chopped tomatoes in oil with sliced garlic, sea salt and pepper over medium heat. Cook about 4 minutes or until the tomatoes start to soften and blister.
 
2.Add chicken stock, white wine (if using), frozen fish fillets and chopped basil. Cover and simmer on the lowest setting for 20-25 minutes, depending on the thickness of the fillets.
 
3. Sprinkle with more chopped basil and serve with quinoa or brown rice and a green veggie. Enjoy! ❤️
